What dairy substitutions can I use to cut fat and calories in my cooking?

You can reduce the fat and calorie count in your dairy choices for cooking. Use a non-stick spray instead of oils or butter and margarine. You can also use water or a broth instead of oils or butter/margarine and saut´┐Ż veggies or other foods that way instead of using a heavier oil, butter, lard or margarine. If you do use oil, use a smaller amount and add it a little bit at a time. Stay away from lard and heavy frying materials. When you need milk in your recipes, substitute a one percent or non-fat milk instead of using whole milk for whatever you are creating. For recipes that call for a light cream, use evaporated skimmed milk instead. If you are baking with butter, shortening, or margarine, try using half of the normal amounts of butter, shortening or margarine and substitute a purred fruit like applesauce for the rest of the measured amount. You can use a non-fat yogurt as a base for a sauce instead of cream or use half a lower fat cream and half non-fat yogurt. If you need eggs, there are egg substitutes available or you can use the egg whites and not the yolk in some recipes. If you need to use cream cheese, get a non-fat or low fat variety, a Neufchatel or a part-skimmed ricotta cheese instead of the higher fat full cream cheese. You may have to experiment a bit with some of the substitutes but it is worth the effort.
